"My research is focused on engineering principles and the design and evaluation of process systems for plant derived raw materials. The objectives of my basic research program are to understand and quantify the mechanisms of heat and moisture transfer in hygroscopic materials. The objective of my applied research is to develop creative approaches to fruit and vegetable processing and products.

My goal for my extension program is to develop an outreach-based program providing information on food engineering principles and practices to fruit and vegetable manufacturers. Information is delivered through educational activities, such as workshops and training courses, as well as through service to individual processors by providing solutions to improve upon existing products and processes. My applied research program is well integrated with my extension program."
